In my research for building a new recipe I had come across both beet beers, and a jasmine IPA. My mind easily went to the marriage of the two, inspired of course by Jitterbug Perfume. Tom Robbins is the reason I met my wife incidentally, and now again we are making this unnaturally good beer together.
Before I go into the beer we were making, here’s one of the things we were drinking – Boulevard’s Love Child No. 2. This was the second time we managed to find a bottle, and one of our few forays into sour beers. While not something we’d want to drink every day, the complexity of a beer like this makes it a perfect sipper.
This time around our recipe is different mainly in the hop selection, and that’s mainly because we ordered a pound of hops as part of a variety pack Austin Homebrew had on sale for a great price.
The beer in it’s first couple months of life has a very noticeable jasmine smell that mingles mysteriously with the hop aroma, and the earthy fecundity of beets. The beet flavor does not sweeten too much, and also has an earthy taste that goes well with hop bitterness. The jasmine aroma died down before the hops lost their punch, for the few bottles we held back. It’s unlike any beer I’ve had, while still very obviously being a strong IPA.
Below is the recipe for the second batch – different hops and additional dry-hopping this time were used. Yeast this time is Pacman which we had harvested, last time it was a packet of Safale US-05.

I just brewed up my first beet beer. I just used a bottle of Biotta Beet Juice though. Much easier. Its only a 5.2% ABV, and only a hint of beet flavor really came through. Any more and it would have been too much in this brew.
